Delicious chocolaty pralines with the addition of apricot jam.APRICOT PRALINEIngredients 42 grams apricot jam64 grams butter2 tablespoons castor sugar + for sprinkling18 grams glucose syrup 114 grams milk chocolate, melted7 grams cocoa butter2 teaspoons brandy 1 cup melted dark chocolate Method1. Preheat oven to 180˚ C.2. Cream together butter and 2 tablespoons castor sugar in a bowl using an electric beater till light. 3. Add glucose syrup and whisk. Add apricot jam and whisk well till mixture turns light and fluffy. 4. Add 114 grams melted milk chocolate and cocoa butter and whisk. Add brandy and whisk well. 5. Fill a piping bag with the chocolate mixture. Refrigerate for 2-3 minutes or set aside for 10-12 minutes. 6. Pipe out the chocolate mixture on a baking tray and refrigerate for 4-5 minutes or till set. 7. Shape the chocolate portions into balls, dip in melted dark chocolate, place on the same tray.
