Apricot Praline | The Dessert Queen - Neelanjali | Sanjeev Kapoor Khazana

Delicious chocolaty pralines with the addition of apricot jam.

APRICOT PRALINE

Ingredients

42 grams apricot jam
64 grams butter
2 tablespoons castor sugar + for sprinkling
18 grams glucose syrup
114 grams milk chocolate, melted
7 grams cocoa butter
2 teaspoons brandy
1 cup melted dark chocolate

Method

1. Preheat oven to 180˚ C.
2. Cream together butter and 2 tablespoons castor sugar in a bowl using an electric beater till light.
3. Add glucose syrup and whisk. Add apricot jam and whisk well till mixture turns light and fluffy.
4. Add 114 grams melted milk chocolate and cocoa butter and whisk. Add brandy and whisk well.
5. Fill a piping bag with the chocolate mixture. Refrigerate for 2-3 minutes or set aside for 10-12 minutes.
6. Pipe out the chocolate mixture on a baking tray and refrigerate for 4-5 minutes or till set.
7. Shape the chocolate portions into balls, dip in melted dark chocolate, place on the same tray. Sprinkle some castor sugar on top and refrigerate for 2-3 minutes.
8. Serve.
