Are you gonna Eat that Seared Yellowfin Tuna?

When choosing Tuna, make sure you select Yellowfin Tuna because of its sustainability.
Seared Yellowfin Tuna is delicious on the grill or seared in a pan.

Brush a little vegetable or sesame oil on each side of Yellowfin and generously season both sides with s&p and sear for about 2 minutes on each side.
Remove and let the Yellowfin Tuna cool for a few minutes. When cutting, make sure you cut against the grain.

We prepared a simple Kalamata olive tapenade to go with our Yellowfin Tuna.
9.5 oz. pitted kalamata olives
couple big squeezes of lemon juice
1 -2 cloves of garlic
pinch of tarragon
about 1/4 - 1/2 cup of extra virgin olive oil.
blend it up.
This makes a lot, but it's great with crackers or even spread on baguette when you make a tuna sandwich with your leftover Yellowfin Tuna!
