Arisi Thengai Payasam/Nariyal Kheer/அரிசி தேங்காய் பாயசம் | Sujan Fun Kitchen

Ingredients:

Coconut - ½ of a big one

Raw rice - 2 tbsp

Almonds - optional - 7 or 8

Jaggery grated - 1 cup

Cardamom as reqd

Ghee - few tsps

Cashewnuts - 6 or 7

Small coconut pieces - a handful

Method:

Grate the coconut

Soak the rice in water for ½ an hour at least

One can use the almonds with the skin - but you can blanch them and remove too. I have used sliced almonds with skin

Now, grind together the coconut, soaked rice and almonds to a smooth gravy consistency

Meanwhile, add the grated jaggery to a pan and add some water to just cover the Jaggery

Boil the above till the jaggery is mixed well in the water and a syrup is formed

Switch off the flame

Now, cook the ground coconut mix in another pan adding water to avoid it becoming too thick

After 5 or 10 mins of cooking, add the jaggery syrup and cook everything together over medium flame

When the Thenga Payasam looks well blended, switch off the flame

Now, heat few tsps of ghee and fry the cashewnuts and coconut pieces till golden

Add them to the Thengai Payasam

Serve the Thengai Payasam hot or cold
