Comfort yourself with a bowl of this soul-satisfying soup loaded with Asian flavours & the goodness of turmeric.

ASIAN TURMERIC AND COCONUT SOUP

Ingredients

½ tsp turmeric powder
½ cup coconut milk + to drizzle
2 tbsps oil
2 medium white onions, chopped
1½ tbsps chopped garlic
½ tbsp chopped ginger
2 tbsps chopped celery
1 medium carrot, peeled and chopped
½ tsp cumin powder
2 tsps coriander powder
Crushed black peppercorns to taste
Salt to taste
3 cups vegetable stock
4 kaffir lime leaves
1 tsp chopped palm jaggery
Coriander leaves for garnish
Roasted and crushed peanuts to sprinkle

Method

1. Heat oil in a nonstick pan. Add white onions, garlic, ginger, celery, carrot and sauté till onions are translucent.
2. Add turmeric powder, cumin powder, coriander powder crushed black peppercorns, salt and mix well.
3. Add ¾ cup water, vegetable stock and mix well. Cover and cook for 8-10 minutes.
4. Blend coarsely with the help of hand blender.
5. Add kaffir lime leaves, palm jaggery and mix well.
6. Add coconut milk and mix well.
7. Transfer into a serving bowl, garnish with coriander leaves, sprinkle roasted peanuts on top. Drizzle coconut milk and serve hot.
