Wash the basmati rice thoroughly under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.2. Heat ghee or clarified butter in a large pan or a pressure cooker over medium heat.3. Add the cinnamon stick, cardamom pods, cloves, and cumin seeds to the pan. Saut for a few seconds until they release their aroma.4. Add the chopped onions and green chilies to the pan. Saut until the onions turn translucent and golden brown.5. Stir in the ginger-garlic paste and saut for another minute until the raw smell disappears.6. Add turmeric powder, red chili powder, and salt to the pan. Mix well to coat the onions evenly with the spices.7. Add the soaked and drained rice to the pan. Gently stir and cook for 2-3 minutes, allowing the rice to absorb the flavors.8. Pour water into the pan and give it a good stir. Adjust the salt if needed.9. If using a pressure cooker, cover the cooker with its lid and cook on medium heat for 1 whistle. Then, reduce the heat to low and cook for an additional 5 minutes. Remove from heat and let the pressure release naturally.10. If using a regular pan, cover the pan with a tight-fitting lid and cook over low heat for about 15-20 minutes or until the rice is cooked and fluffy.11. Once cooked, fluff the rice gently with a fork. Garnish with freshly chopped coriander leaves.12. Serve the aromatic Bagara Rice hot with your favorite curry or raita.Enjoy the delightful flavors of Bagara Rice!
