Authentic Balkan Dizmana Recipe: Cheesy Yeast Bread Delight
I'm excited to share a delicious recipe from the Balkans called Dizmana. This savory treat features fluffy yeast dough shaped into balls and stuffed with a variety of cheeses. What makes Dizmana truly unique is the rich topping made from yogurt, egg, and oil, which is poured over the dough before baking to create a golden, flavorful crust. It's a perfect dish for breakfast, lunch, as a snack or even bun for your meals.

Ingredients for Cheese filled Yeast Buns "DIZMANA"
For the starter:
200ml. lukewarm water
200ml. lukewarm milk
100ml oil (I used mix of vegetable and olive oil)
30gr. fresh yeast or 1 packet double active dry yeast or tbsp dry yeast
1 tsp sugar
2 cups flour
For the dough
to the starter add:
4 cups more or less flour (add gradually after 3+1/2 cups
2 tsp salt
For the yogurt topping sauce:
1 egg
400ml yogurt or mix of yogurt and milk
50 ml olive oil
1/2 tsp salt
For the filling (optional)
about 1+1/2 cup cheese curd, or different mix of cheeses like feta, mozarella, aged cheeses etc.
to sprinkle on top sesame seeds and nigella seeds (optional)
