A healthy and delicious blend of two super foods – methi and toor dal in the form of a bhaji for a nutritional meal.

BABY METHI BHAJI

Ingredients

1 cup fresh fenugreek leaves (methi), cleaned and chopped
2 tbsp split Bengal gram (toovar dal), soaked
1 tbsp oil
2-3 green chillies, chopped
6-8 garlic cloves, chopped
1 Medium onion, chopped
½ tsp turmeric powder
Salt to taste
1 tbsp chopped jaggery
2 tbsp coconut, scraped

Method

1. Heat oil in a non-stick pan. Add green chillies, garlic and sauté till golden brown in color.
2. Add onion sauté for 2-3 minutes or till golden brown in color add fenugreek leaves and mix well.
3. Add toovar dal, turmeric powder, 1/2 cup of water .stir to mix, cover and cook for 5 minutes.
4. Add salt, jaggery and sauté for a minute on a medium heat. Add coconut and mix well
5. Serve hot.
