Baby Uttapam Chaat Sanjeev Kapoor Khazana

Small is beautiful and tasty when served as chaat. Unique way to serve baby uttapams with gravy sabzi and the chaat masalas and chutneys. Have fun!

BABY UTTAPAM CHAAT

Ingredients

1 cups readymade dosa batter
1 tbsp oil + for cooking
1 tsp mustard seeds
1 tsp split skinless black gram (dhuli urad dal)
2 green chillies, chopped
6-8 curry leaves, shredded
1 medium onion, chopped + to sprinkle
Salt to taste
tsp turmeric powder
tsp sugar
2 medium potatoes, boiled, peeled and mashed
2 tbsps chopped fresh coriander leaves
Chopped tomatoes to sprinkle
Chaat masala to sprinkle
Green chutney to drizzle
Red chilli-garlic chutney to drizzle
Date and tamarind chutney to drizzle
2 lemon wedges
Roasted cumin powder to sprinkle
Nylon sev to sprinkle

Method

1. For the sabzi, heat oil in a shallow nonstick pan. Add mustard seeds and once they start to sputter, add urad dal and saut till golden brown.
2. Add green chillies, curry leaves and saut for 30 seconds.
3. Add onion and saut till translucent.
4. Add salt, turmeric powder, sugar and mix well.
5. Add cup water and mix well. Add potatoes, coriander and mix well. Cook for 2-3 minutes.
6. Heat a nonstick pan. Drizzle some oil and drop small spoonful of batter and spread evenly.
7. Drizzle some more oil on top and cook for 2 minutes on medium heat. Flip and cook on other side for a minute more.
8. Arrange the prepared baby uttapams on a serving plate. Spread a portion of prepared sabzi on each uttapam.
9. Sprinkle some chopped onions and tomatoes on top.
10. Sprinkle chaat masala and drizzle all the chutneys n top.
11. Squeeze lemon juice and sprinkle roasted cumin powder and nylon sev on top.
12. Sprinkle coriander leaves and serve.
