Babycorn Fritters | Sanjeev Kapoor Khazana

Babycorn coated with a refined and rice flour marinade and deep fried to crisp.

BABYCORN FRITTERS

Ingredient
12 -16 Baby corn
1cup refined flour
½ cup rice flour
¼ cup cornstarch
Salt to taste
A pinch crushed black peppercorns
Oil for deep fry
Sweet chilli sauce for serving
Micro greens for garnish

Method

1. Combine rice flour ,refined flour, 2 tbsps cornstarch ,salt, black pepper powder add 1 cup chilled water and mix well and whisk well into a smooth batter
2. Heat sufficient oil in pan
3. Dust remaining cornstarch on baby corn mix well set aside and dip baby corn in batter and deep-fry in oil till it get crisp and golden brown, Drain on absorbent paper
4. Serve hot with sweet chilli sauce. And garnish with micro green.
