Badam Puri | Sanjeev Kapoor Khazana

Crispy deep fried puris soaked in sugar syrup to make this delicious sweet snack.

BADAM PURI

Ingredients

1 cup refined flour (maida) + for dusting
2-3 tablespoons almond (badam) paste
½ cup rice flour
½ teaspoon green cardamom powder
1 tablespoon ghee + for brushing
Milk as required
Cloves as required
Oil for deep-frying
1 cup sugar
A pinch saffron
Chopped mixed nuts for garnishing

Method

1. Knead together refined flour, rice flour, almond paste, ¼ tsp cardamom powder and ghee with milk as required to a stiff dough.
2. Divide the dough into equal portions, dust with some refined flour and roll out into small discs.
3. Brush with some ghee, fold into triangles, roll out and prick all over with a fork. Secure with a clove.
4. Heat sufficient oil in a kadai. Deep-fry prepared puris till golden brown. Drain on absorbent paper.
5. Heat sugar in a non-stick pan. Add sufficient water, saffron and remaining cardamom powder, mix well and cook till a thick syrup is formed.
6. Soak the fried puris in the sugar syrup, garnish with nuts and serve immediately.
