BADAMI PANEER MASALAIngredients250 grams cottage cheese (paneer), cut into 1 inch cubes¼ cup almonds (badam), blanched, peeled and ground into a fine paste2 tbsps oil1 tsp fennel seeds3-4 cloves1 inch ginger, chopped2 medium onions, sliced2 medium tomatoes, chopped½ tsp red chilli powder¼ tsp turmeric powder½ tsp cumin powderSalt to taste2 tbsps fresh creamSprig of coriander for garnishMethod1. Heat oil in a non-stick pan, add fennel seeds, let the colour change. Add cloves, ginger, and sauté for 30 seconds. 2. Add onions and sauté till golden brown. Add tomatoes and mix well. Cover and cook till tomatoes are pulpy.3. Add red chilli powder, turmeric powder, cumin powder, and mix well. Add salt and mix well. Cook for 30 seconds and take it off the heat and set aside to cool slightly.4. Add the cooled mixture into a blender jar and blend to a fine paste. Set aside.5. Heat a non-stick pan, add the prepared paste, almond paste and mix well. Cook for 1-2 minutes. 6. Add fresh cream and mix well. Add paneer pieces and gently mix. Adjust seasoning and mix well.
