Brinjals cooked with spring onions, tomatoes and masalasBAINGAN CURRYIngredients8 long brinjals (baingan)5 spring onions2 tbsps oil1 tsp cumin seeds½ tsp onion seeds (kalonji)Salt to taste1 tbsp chopped garlic¼ tsp turmeric powder½ tsp red chilli powder1 tsp coriander powder½ tsp cumin powder1 cup chopped tomatoes1 tbsp gram flour (besan)3 tbsps yogurtMethod1. Chop spring onion stems roughly. Halve the brinjals and chop them roughly.2. Heat oil in a non-stick pan, add cumin seeds and onions seeds and saute. Add brinjals and mix. Add salt and mix. Cover and cook for 2 minutes.3. Roughly chop spring onion bulbs.4. Add garlic, turmeric powder, red chilli powder, coriander powder and cumin powder to the pan and mix well.5. Add spring onion bulbs and stems and mix. Cover and cook for 2 minutes.6. Add tomatoes and mix. Cover and cook for 2 minutes.7. Add gram flour and mix. Add yogurt and mix.
