Banana Muffins1 cup ripped mashed banana1 1/2 cups plain flour (maida)1 cup powdered sugar1/3 cup oil1/2 tsp vanilla extract1/4 tsp cinnamon (dalchini) powder1/8 tsp nutmeg (jaiphal) powder5 tbsp milk1 tsp baking powder1/2 tsp baking sodaFor eggless banana muffinsTo make banana muffins, in a deep bowl, add mashed bananas, oil, sugar, vanilla extract, milk, cinnamon powder and nutmeg powder. Whisk well.Sieve plain flour, baking powder and baking soda. Mix well to form a dropping consistency batter.Pour equal quantities of batter in a lined muffin tray. Tap it twice to remove the air bubbles.Bake in a pre-heated oven at 180c (360f) for 15 minutes or until done.Remove and cool slightly. Serve the banana muffins warm.
