Add 2 tbsp of sugar, 1/2 cup of water to a cooking vessel, and boil the water till the sugar dissolves.2. Once the sugar dissolves completely, add 1/4 tsp of roasted cumin powder and 1/4 tsp of black salt. 3. Simmer the syrup for a minute or two and then keep it aside. 4. Chop 4 tomatoes and heat 1 tbsp of ghee in the Kadai. 5. Roast 1/2 tsp cumin seeds in the hot ghee. Add 1 inch finely chopped ginger, 2 finely chopped chilies, and roast briefly.6. Add tomatoes, 1/2 tsp of turmeric powder, 1 tsp of coriander powder, 1 tsp of red chili powder, and mix well. 7. Add 1/2 tsp of salt to the tomatoes and cook covered over the low-medium flame for 3-4 minutes. 8. Mash the tomatoes, add 1/2 cup of water, and 3 boiled & crumbled potatoes to the pan. 9. Mix 1/2 tsp of black salt, 1/2 tsp of dry mango powder, 1/4 tsp of garam masala to the tomatoes, and cook for a few minutes.10. Add 1/2 tsp of roasted cumin powder, 1 tsp of chaat masala, 1-2 tbsp of chopped coriander leaves, 1/2 lemon juice, and mix well.11. To serve, take the chaat out in a bowl, add desi ghee, and 2-3 spoons of syrup.12. Sprinkle chaat masala, cumin powder, namakpare, and coriander leaves over the chaat. 13.
