Ingredients for
Cajun Potato
- Potato - 500 grams
- Salt - 1/2 tsp
- Refined flour - 3 tbsp
- Rice flour - 3 tbsp
- Salt - 1/2 tsp
- Chilli flakes - 1/2 tsp
- Oregano - 1/2 tsp
- Black pepper - 1/4 tsp, crushed
- Mayonnaise - 1/2 cup
- Chilli flakes - 1/2 tsp
- Oregano - 1/2 tsp
- Black pepper - 1/4 tsp, crushed
- Kashmiri Red chilli - 1 tsp
- Red chilli sauce - 1 tsp
- Salt - 1/4 tsp
- Milk - 1/4 cup
- Chilli flakes
- Coriander
and oil for frying

Instructions:
Start by washing the potatoes thoroughly in running water to remove all the dirt. Then, soak them in water for 15 minutes to ensure all the dirt is removed.

After soaking, place the potatoes in a cooker and add water until the potatoes are completely submerged. Add 1/2 teaspoon of salt to the water and let the potatoes cook for 3 minutes. Once done, turn off the heat and let the potatoes cool down.

Once the potatoes are cool enough to handle, place them on a board and gently press them with your palm to flatten them slightly. This will help the flour mixture coat the potatoes evenly.

In a mixing bowl, combine the refined flour, rice flour, 1/2 teaspoon of salt, 1/2 teaspoon of chilli flakes, 1/2 teaspoon of oregano, and 1/4 teaspoon of crushed black pepper. Add some water and mix well to create a smooth and runny batter.

Place the flattened potatoes into the flour batter, making sure they are coated evenly.

Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the coated potato wedges into the pan. Fry the potatoes until golden brown and crispy, stirring occasionally to ensure even cooking. Remove from the pan and place them on a paper towel to drain excess oil.

In a small mixing bowl, combine the mayonnaise, 1/2 teaspoon of chilli flakes, 1/2 teaspoon of oregano, 1/4 teaspoon of crushed black pepper, 1 teaspoon of Kashmiri red chilli powder, 1 teaspoon of red chilli sauce, 1/4 teaspoon of salt, and 1/4 cup of milk. Mix well to make the dipping sauce.

After frying the flattened potatoes, transfer them onto a serving dish. Spoon the prepared sauce over the potatoes, ensuring they are evenly coated. Sprinkle some chilli flakes and chopped coriander on top for added flavor and garnish. Serve the hot and crispy Cajun potatoes with the dipping sauce on the side. Enjoy the delicious combination of spices and textures in every bite!
