Basic Cupcakes with Cocoa Frosting | Sanjeev Kapoor Khazana

Follow these easy steps to make basic cupcakes at home topped with cocoa frosting.

BASIC CUPCAKES WITH COCOA FROSTING

Ingredients

1 cup + 2 tablespoons refined flour (maida)
½ cup butter
¾ cup + 2 tablespoons castor sugar
¾ cup sour cream
2 egg whites
1 teaspoon vanilla essence
½ teaspoon baking powder
A pinch salt
¼ cup milk
Frosting
⅔ cup cocoa powder
1 cup butter
2 cups powdered sugar
1 teaspoon vanilla essence
1 teaspoon milk
½ cup vegetable shortening

Method

1. Preheat oven to 180̊ C.
2. Cream together butter and castor sugar till light. Add sour cream and beat. Add egg whites and vanilla essence and beat well.
3. Add flour, baking powder and salt and fold till well combined. Add milk and mix well into a lump free batter. Transfer the batter in a piping bag fitted with a nozzle.
4. Pipe out the batter into individual cupcake moulds filling 3/4th. Place them on a baking tray, put the tray in the preheated oven and bake for 8-10 minutes. Remove from oven, cool and demould.
5. To make the frosting, cream together butter, powdered sugar and vanilla essence till light. Add milk, shortening and cocoa powder and beat till well combined. Fill the frosting in a piping bag fitted with a nozzle.
6. Pipe out the frosting on the cupcakes and serve.
