Batata Matki Ussal | Cooksmart | Sanjeev Kapoor Khazana

Sprouted matki and potato cooked with masalas; add this dish to your everyday lunch or dinner menu to get some variety going amidst your regular dal sabzi.

BATATA MATKI USSAL
Sprouted matki and potato cooked with masalas

Ingredients

2 medium potatoes, quartered vertically and sliced
1½ cups (200 gms) sprouted matki beans
2 tbsps oil
1 medium onion
¼ tsp asafoetida
½ tsp mustard seeds
1 tsp cumin seeds
8-10 curry leaves
¼ tsp turmeric powder
Salt to taste
1 tsp red chilli powder
1½ tsps goda masala powder
1½ tsps sugar
A few sprigs of fresh coriander leaves
2 tbsps freshly scraped coconut

Method

1. Heat oil in a non-stick pan. Chop onion.
2. Add asafoetida, mustard seeds, cumin seeds, curry leaves and onion to the pan and sauté.
3. Add potatoes and mix. Add turmeric powder and mix well. Add salt and mix well. Add matki and 1 cup water and mix.
4. Add red chilli powder and goda masala and mix. Add sugar and mix well. Cover and cook till both potatoes and matki are done.
5. Chop a few sprigs of fresh coriander leaves.
6. Transfer the ussal into a serving plate. Garnish with coconut and coriander leaves and serve hot.
