BATATA MATKI USSALSprouted matki and potato cooked with masalasIngredients2 medium potatoes, quartered vertically and sliced1½ cups (200 gms) sprouted matki beans2 tbsps oil1 medium onion¼ tsp asafoetida ½ tsp mustard seeds1 tsp cumin seeds8-10 curry leaves¼ tsp turmeric powderSalt to taste1 tsp red chilli powder1½ tsps goda masala powder1½ tsps sugarA few sprigs of fresh coriander leaves2 tbsps freshly scraped coconutMethod 1. Heat oil in a non-stick pan. Chop onion.2. Add asafoetida, mustard seeds, cumin seeds, curry leaves and onion to the pan and sauté. 3. Add potatoes and mix. Add turmeric powder and mix well. Add salt and mix well. Add matki and 1 cup water and mix. 4. Add red chilli powder and goda masala and mix. Add sugar and mix well. Cover and cook till both potatoes and matki are done.5. Chop a few sprigs of fresh coriander leaves. 6. Transfer the ussal into a serving plate.
