Batata Puri | Sanjeev Kapoor Khazana

A scrumptious puri made using sago and potatoes.

BATATA PURI

Ingredients

4 medium potatoes, boiled and peeled
1 cup soaked sago
½ cup roasted and crushed peanuts
2 tbsps freshly chopped coriander leaves
A pinch of sugar
Rock salt to taste
1 tbsp ginger green chilli paste
½ tbsp lime juice
2 banana leaves cut into medium squares
Oil for deep frying
Coconut chutney to serve

Method

1. In a bowl add sago and peanuts. Mix well. Add coriander, sugar, rock salt, ginger green chilli paste and lemon juice. Mash and add potatoes in bowl. Mix well.
2. Place a squared banana leaf on worktop, apply little ghee on leaf, take a portion of potato stuffing, gently press and slightly flatten it. Remove and set aside.
3. Heat sufficient oil in a non-stick kadai, add puris and deep fry till golden brown on both sides. Remove and drain on an absorbent paper.
4. Transfer puris in a serving plate.
5. Serve hot with coconut chutney.
