Beans cake - Nigerian Moi moi recipe

Moyin Moyin is a delicious steamed Nigerian beans cake. It is usually made from black eyed peas and can be served as side dish.
You will need:
1 and cups black eyed peas

5 hard boiled eggs

1 small onion, chopped

cup ground shrimp or crayfish

tsp chili pepper or to taste

1 bouillon cube or Maggi Cube

cup vegetable oil

3 tbsp tomato stew or tomato sauce

tsp curry powder

tsp thyme

1 cup water

Salt, to taste

Direction:

The first step is to soak the beans overnight and remove the skin. If you don't know how to remove the beans skin ,watch my Akara video.

In a food processor, add onion, shrimp powder or crayfish powder. Add chili powder to taste, I love to add some spring onion which totally optional, then add one bouillon and 2 tablespoon of tomato sauce. Add 2 drops of water and blend until smooth.
Next gradually add the beans in the blender with a little bit of water and blend until very smooth, Repeat the process until done.
Pour the batter in a bowl; add salt and I am going to add a tsp of curry powder and tsp of thyme. Mix well and pour in the oil.
Next spoon the mixture into the bowls. Add this point you can add cooked meat, fish or anything you want to feel with but I will be adding boiled eggs only.
Next use your steamer to steam for 45 min, check if ready by sticking in the center of the moyin moyin, f it comes out clean, you are done.
Let it cool down for 10 min before serving.

Next add water in a pot and place a steamer on top . Place the bowls on the steamer and cover with aluminum foil and replace the lid. Steam for 45 min. Check with a fork to see when it is done. Let cool down for 10 min before serving.
