The traditional Begun Bhaja gets a delicious twist in this recipe.
BEGUN BASANTI

Ingredients

1 medium long brinjal
Salt to taste
½ tsp Tata Sampann Turmeric Powder
5 tbsps mustard oil + for drizzling
3 tbsps kasundi mustard sauce
1 tsp sugar
3 tbsps scraped fresh coconut + for garnish
1 tbsp chopped coriander
1-2 slit green chillies + for garnish

Method

1. Cut the brinjal in half lengthwise and divide each half into two pieces. Sprinkle salt and¼ tsp Tata Sampann Turmeric Powder. Rub till well coated.
2. Heat 4 tbsps mustard oil in a non-stick shallow pan, let it smoke. Shallow fry the brinjal pieces till golden brown on all sides. Drain on an absorbent paper.
3. For the sauce, add kasundi mustard sauce, sugar, salt, remaining Tata Sampann Turmeric Powder, and remaining mustard oil. Add coconut, chopped coriander, green chillies and a little water. Mix well till the sugar dissolves.
4. For serving, place the brinjal piece on a serving plate, drizzle the prepared sauce on top, drizzle a little mustard oil on top.
5. Garnish with slit green chillies, chopped coriander and scraped fresh coconut.Serve hot.
