Besan Ke Pude Ki Sabzi | Sanjeev Kapoor Khazana

A delicious recipe made using the mighty besan flour, perfect for lunch or dinner.

BESAN KE PUDE KI SABZI

Ingredients

1½ cups Tata Sampann Fine Besan
Salt to taste
¼ tsp carom seeds (ajwain)
¼ tsp dried mango powder (amchur)
2 tbsps yogurt
1½ tbsps + 2 tsps oil
1 tsp cumin seeds
1 bay leaf
1 medium onion, chopped
2 tsps ginger-garlic paste
1-2 green chillies, chopped
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
½ cup fresh tomato puree
1 tbsp freshly chopped coriander leaves
Coriander sprig for garnish

Method

1. In a bowl, add Tata Sampann Fine Besan, salt, crush and add ajwain. Add dried mango powder, yogurt and sufficient water.
2. Whisk well to form a batter of pouring consistency. Continue to whisk for 2-3 minutes.
3. Heat oil in a non-stick shallow pan, pour the batter into the hot pan, cover and cook on low heat till the base is cooked completely.
4. Flip and cook till the other side for 1-2 minutes till lightly golden brown in colour. Take it off the heat and allow to cool slightly.
5. Heat remaining oil in a non-stick wok, add cumin seeds and sauté for 1 minute or till the seeds change colour.
6. Add bay leaf, mix well. Add onion and a pinch of salt, sauté till lightly golden brown in colour.
7. Add ginger-garlic paste and sauté well. Cook for 1 minute. Add green chillies, salt, turmeric powder, red chilli powder and coriander powder. Mix well.
8. Add 2-3 tbsps water and mix well. Cook for 1-2 minutes. Add tomato puree and mix well. Cover and cook till the oil separates, mixing occasionally.
9. Meanwhile, cut the cooked besan pude into 2 inch slices. Set aside.
10. Add 2 cups water and mix well. Cook till the mixture comes to a boil.
11. Add the pude into it and mix well. Cover and cook for 2 minutes. Switch the heat off and add chopped coriander, mix well.
12. Transfer to a serving bowl, garnish with coriander sprig and serve hot.
