A delicious recipe made using the mighty besan flour, perfect for lunch or dinner. BESAN KE PUDE KI SABZIIngredients1½ cups Tata Sampann Fine Besan Salt to taste¼ tsp carom seeds (ajwain)¼ tsp dried mango powder (amchur)2 tbsps yogurt1½ tbsps + 2 tsps oil1 tsp cumin seeds1 bay leaf1 medium onion, chopped2 tsps ginger-garlic paste1-2 green chillies, chopped½ tsp turmeric powder1 tsp red chilli powder1 tsp coriander powder½ cup fresh tomato puree1 tbsp freshly chopped coriander leavesCoriander sprig for garnishMethod1. In a bowl, add Tata Sampann Fine Besan, salt, crush and add ajwain. Add dried mango powder, yogurt and sufficient water.2. Whisk well to form a batter of pouring consistency. Continue to whisk for 2-3 minutes. 3. Heat oil in a non-stick shallow pan, pour the batter into the hot pan, cover and cook on low heat till the base is cooked completely.4. Flip and cook till the other side for 1-2 minutes till lightly golden brown in colour. Take it off the heat and allow to cool slightly.5. Heat remaining oil in a non-stick wok, add cumin seeds and sauté for 1 minute or till the seeds change colour.6. Add bay leaf, mix well. Add onion and a pinch of salt, sauté till lightly golden brown in colour.7. Add ginger-garlic paste and sauté well. Cook for 1 minute. Add green chillies, salt, turmeric powder, red chilli powder and coriander powder. Mix well.8. Add 2-3 tbsps water and mix well. Cook for 1-2 minutes. Add tomato puree and mix well. Cover and cook till the oil separates, mixing occasionally.9. Meanwhile, cut the cooked besan pude into 2 inch slices. Set aside.10. Add 2 cups water and mix well. Cook till the mixture comes to a boil.11. Add the pude into it and mix well. Cover and cook for 2 minutes. Switch the heat off and add chopped coriander, mix well.12.
