What You Need for Garlic Home Fries

1 large POTATO
5-7 cloves GARLIC
2 Tbsp BUTTER
1 tsp SALT
2-3 Tbsp OIL

optional:
some HOT PEPPERS
1-2 tsp PAPRIKA (CG prefers smoked paprika)


Make the Best Home Fried Potatoes

Dice a potato. Cubes half the size of a die are good, but any size will be fine as long as they are reasonably uniform and can cook evenly.
Heat oil in a non-stick skillet.
Add in the diced potato. You want the oil hot and the potatoes to sizzle when they hit the pan. Spread the potatoes out in an even layer. Reduce the heat to a low and let the potatoes sizzle away.
After 5 minutes, turn the potatoes.
After 10 minutes add in the seasoning and hot pepper, if desired. Turn the potatoes again. Adjust heat as needed.
Continue cooking for another 5 minutes, turning as needed.
When the potatoes are close to desired doneness, add in the butter and the finely chopped garlic.
Cook for a few more minutes and serve hot.
