But do you peel the potato first? Thats up to you, but I like to leave the potato peeling on, because its added taste and texture and nutrition, so why not? For hummus, I generally nuke the sweet potato in the microwave. Wash the potato, then pierce the skin of the potato 4 or 5 times with a fork, then microwave the potato for 5 to 6 minutes.Put all ingredients into a food processor and then blend until smooth. If the hummus is overly thin, you can thicken it with added sweet potato. If the hummus is too thick, add a spoonful of water at a time until the hummus reaches the consistency you like, or add a bit of extra olive oil.Serve hummus with warm pita bread, pita chips, crackers, or raw fruit and vegetables.
