Place the grated cucumber into a strainer over a bowl to allow the cucumber to drain. Mix a bit of salt to help draw out the water. Set bowl aside and prep the other ingredients.Into a mixing bowl, add Greek yogurt, minced garlic, lemon zest and juice, and fresh chopped herbs.If you don't have a lemon on hand, substitute a mild rice or wine vinegar.Mix ingredients well.Return to the cucumber. Quite a bit of water will have drained into the straining bowl.
