BHEIN ALOO

Ingredients

150 grams lotus stems (nadru), peeled, boiled and sliced thickly
2 medium potatoes, boiled, peeled and cut into ½ inch cubes
3 tbsps oil
1 tsp cumin seeds
1 large onion, finely chopped
1 tbsp ginger-garlic paste
1 large tomato, finely chopped
Salt to taste
¾ tsp red chilli powder
1 tbsp coriander powder
¼ tsp turmeric powder
½ tsp garam masala powder
¼ tsp dried fenugreek leaves (kasuri methi) powder
4 tbsps chopped fresh coriander leaves
Rotis to serve
Onion slices to serve
Lemon wedges to serve

Method

1. Heat oil in a wok, add cumin seeds and let them change colour. Add onionand sauté till golden brown.
2. Add ginger-garlic paste and mix well. Cook for a minute. Add tomato and mix well. Add salt, mix and cover and cook for 4-5 minutes or till pulpy.
3. Add red chilli powder, coriander powder, turmeric powder and garam masala powder and mix well.
4. Add dried fenugreek leaves powder, ½ cup water and mix well. Add lotus stem and potatoes and mix well. Add chopped coriander, mix and cook for a minute. Take the pan off the heat.
5. Transfer into a serving bowl, garnish with coriander sprig. Serve hot with rotis, onion slices and lemon wedges.
