BHEIN ALOOIngredients150 grams lotus stems (nadru), peeled, boiled and sliced thickly2 medium potatoes, boiled, peeled and cut into ½ inch cubes3 tbsps oil1 tsp cumin seeds1 large onion, finely chopped1 tbsp ginger-garlic paste1 large tomato, finely choppedSalt to taste¾ tsp red chilli powder1 tbsp coriander powder¼ tsp turmeric powder½ tsp garam masala powder¼ tsp dried fenugreek leaves (kasuri methi) powder4 tbsps chopped fresh coriander leavesRotis to serveOnion slices to serveLemon wedges to serveMethod1. Heat oil in a wok, add cumin seeds and let them change colour. Add onionand sauté till golden brown.2. Add ginger-garlic paste and mix well. Cook for a minute. Add tomato and mix well. Add salt, mix and cover and cook for 4-5 minutes or till pulpy. 3. Add red chilli powder, coriander powder, turmeric powder and garam masala powder and mix well.4. Add dried fenugreek leaves powder, ½ cup water and mix well. Add lotus stem and potatoes and mix well. Add chopped coriander, mix and cook for a minute. Take the pan off the heat.5. Transfer into a serving bowl, garnish with coriander sprig.
