If you are bored of eating the same regular kadhi again and again, try this Bhindi Kadhi recipe where the kadhi is topped with sautéed bhindi. BHINDI KADHIIngredients150 grams lady fingers, cut into 1 inch pieces1½ cups yogurt 2 tbsps gram flour½ tsp turmeric powder3 tbsps oil1 tsp mustard seeds¼ tsp fenugreek seeds (methi dana)2 green chillies, chopped1 inch ginger, choppedA pinch of asafoetida (hing)10-12 curry leaves1 dried red chilli, broken1 large onion, slicedSalt to taste¼ tsp red chilli powderRed chilli oil for garnishSteamed rice to serveMethod1. Take yogurt in a large bowl, add gram flour and ¼ tsp turmeric powder and whisk well. Add 3 cups water and whisk till well combined. 2. Heat 2 tbsps oil in a deep non-stick pan, add mustard seeds and let them splutter. Add fenugreek seeds, green chillies and ginger, asafoetida and 10-12 curry leaves. Sauté for a minute. Add dried red chilli and mix well. 3. Add onion and mix well. Add salt and sauté for 2 minutes or till onion turns translucent. Add the prepared mixture and mix well. Cook on low heat for 15 minutes. 4. Heat remaining oil in a non-stick pan, add lady fingers and salt, red chilli powder and remaining turmeric powder and mix well. Cook for 8-10 minutes, sautéing in between.5. Transfer the kadi in a serving bowl, top up with the prepared bhindi and garnish with chilli oil. Serve hot with steamed rice.
