Bhindi Masala | Sanjeev Kapoor Khazana

A staple in all Indian households, this dish made with ladies finger or okra can be served with roti or rice. Go ahead give it a try.

BHINDI MASALA

Ingredients

500 grams ladyfinger (bhindi), heads removed and slit
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
2 medium onions, sliced
2-3 green chillies, slit
1½ teaspoons red chilli powder
¼ teaspoon turmeric powder
2 teaspoons coriander powder
Salt to taste
1 teaspoon dried mango powder (amchur)
1 tablespoon chopped fresh coriander leaves
Fresh coriander sprig for garnishing

Method

1. Heat oil in a non-stick pan. Add cumin seeds and sauté till the seeds chance colour.
2. Add onions and sauté till translucent. Add green chillies and sauté for 2-3 minutes.
3. Add ladyfingers, stir and cook for 3-4 minutes. Sprinkle some water, cover and cook till fully done.
4. Add dried mango powder and coriander leaves and mix well.
5. Garnish with coriander sprig and serve hot.
