BHOPALI CHICKEN REZALA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Boiling
Water as required,
Salt to taste,
1 tsp Sugar,
3 no. medium Onions, roughly diced,

For Chicken Marination
900 gms Chicken (drumsticks & thighs)
Salt to taste,
1 tbsp Oil,
2 no. Green chillies (less spicy & broken into half)
1 heaped tbsp Ginger Garlic paste,
1 tsp Turmeric powder,

For Chicken Rezala
3-4 tbsp Ghee,
2 tbsp Oil,
1 tsp Cumin seeds,
1 Green cardamom,
1 no. Bay leaf,
inch Cinnamon stick,
Marinated chicken,
Prepared boiled onions paste,
2 no. Green chillies, roughly chopped,
1 tbsp Coriander powder,
1 tsp Turmeric powder,
tsp Degi red chili powder,
cup Curd, beaten,
1 cups Water,
cup fresh Coriander leaves, finely chopped,
tbsp Black cardamom & Black peppercorns powder,
1 tbsp Fried onions & cashew nuts paste,

For Garnish
Coriander sprig,
Boiled Egg,

Process
For Boiling
In a sauce pot, add water, once it's roaring boiled, add salt to taste, sugar, onions, cover it with the lid and cook it for 7-8 minutes until cooked well.
Strain out the onions, transfer it to a mixer grinder jar and grind it smoothly.
Keep it aside for further use.

For Chicken Marination
In a bowl, add chicken, salt to taste, oil, green chillies, ginger garlic paste, turmeric powder and mix it well.
Keep it aside to marinate for 10-15 minutes.

For Chicken Rezala
In a handi, add ghee, oil, once it's hot, add cumin seeds, green cardamom, bay leaf, cinnamon stick and let it splutter.
Add marinated chicken and saute it for a while.
Add prepared boiled onion paste and cook it well.
Add green chillies, coriander powder, turmeric powder, degi red chili powder and saute it a minute.
Add curd and simmer it for a minute, cover it with the lid and cook it for 5-6 minutes until cooked well.
Add water, fresh coriander leaves, black cardamom & black peppercorns powder and let it simmer for a while.
Finish it with some fried onions & cashew nuts paste and mix it well.
Transfer it to a serving dish, garnish it with coriander sprig and boiled egg.
Serve hot with roti.
