One of the most popular street foods in Bombay made with eggs which is available throughout the day.BHURJI PAVIngredients6 eggs 1 tablespoon + 1 teaspoon oil1 medium onion1 green chilli1 medium tomato, finely chopped1 teaspoon red chilli powder½ teaspoon cumin powder1 teaspoon coriander powder¼ teaspoon turmeric powderSalt to taste 3-4 tablespoons milk5-6 fresh coriander sprigs+ for garnishing1 tablespoon butterMethod1. Heat 1 tablespoon oil in a non-stick pan. 2. Finely chop onion, add to hot oil and sauté till translucent. 3. Finely chop green chilli, add to sautéed onion and sauté for 30 seconds. 4. Break eggs in a bowl and beat well.5. Add tomato to sautéed onion and sauté till soft. Add chilli powder, cumin powder, coriander powder, turmeric powder and salt and sauté for 1 minute. 6. Add milk to beaten eggs and beat well. Pour in the pan, mix continuously till scrambled and cook till eggs are done. 7. Finely chop 5-6 coriander sprigs, add to pan and mix well.8. Heat butter and remaining oil in another non-stick pan.9. Slit each pav with one side intact, place on butter with cut side downwards and toast from both sides till light golden brown.10.
