This different and delicious Bihari style chicken is not just unique in the way it is cooked but also the flavours are intense and absolutely mouth-watering.

BIHARI CHICKEN HANDI

Ingredients

750 grams chicken, cut into 2 inch pieces on the bone
¼ cup mustard oil
1 inch cinnamon stick
2 black cardamoms
1 tsp cumin seeds
5-6 black peppercorns
3-4 cloves
1 large onion, finely chopped
Salt to taste
1 inch ginger, crushed
3-4 green chillies, crushed
2-3 dried red chillies
20 grams whole garlic bulb
1½ tsps red chilli powder
¼ tsp turmeric powder
1½ tsps coriander powder
1½ tsps Tata Sampann Chicken Masala
2 small tomatoes, chopped
2 tbsps ghee
Chopped fresh coriander leaves for garnish

Method

1. Heat mustard oil in a kadai and let it smoke. Switch the heat off till the oil cools down slightly.
2. Switch the heat back on, add cinnamon stick, black cardamoms, cumin seeds, black peppercorns and cloves and sauté till the whole spices turn fragrant.
3. Add onion, mix and add salt and sauté till the onions turn light golden brown.
4. Add ginger, green chillies and dried red chillies and sauté for a minute. Add garlic bulb, mix and sauté for 1-2 minutes.
5. Add salt, red chilli powder, turmeric powder, coriander powder and Tata Sampann Chicken Masala and mix well. Add 2 tbsps water, mix and cook for 1 minute.
6. Add tomatoes, mix and add ¼ cup water, mix well, cover and cook for 2-3 minutes.
7. Add chicken and sauté on high heat for 3-4 minutes. Add ¼ cup water and ghee and mix, cover and cook for 10-15 minutes or till the chicken is cooked completely.
8. Switch the heat off and transfer the chicken mixture into a serving bowl, garnish with coriander leaves.
9. Serve hot.
