This different and delicious Bihari style chicken is not just unique in the way it is cooked but also the flavours are intense and absolutely mouth-watering.BIHARI CHICKEN HANDIIngredients750 grams chicken, cut into 2 inch pieces on the bone¼ cup mustard oil1 inch cinnamon stick2 black cardamoms1 tsp cumin seeds5-6 black peppercorns3-4 cloves1 large onion, finely choppedSalt to taste1 inch ginger, crushed3-4 green chillies, crushed2-3 dried red chillies20 grams whole garlic bulb1½ tsps red chilli powder¼ tsp turmeric powder1½ tsps coriander powder1½ tsps Tata Sampann Chicken Masala 2 small tomatoes, chopped2 tbsps gheeChopped fresh coriander leaves for garnish Method1. Heat mustard oil in a kadai and let it smoke. Switch the heat off till the oil cools down slightly. 2. Switch the heat back on, add cinnamon stick, black cardamoms, cumin seeds, black peppercorns and cloves and sauté till the whole spices turn fragrant.3. Add onion, mix and add salt and sauté till the onions turn light golden brown. 4. Add ginger, green chillies and dried red chillies and sauté for a minute. Add garlic bulb, mix and sauté for 1-2 minutes.5. Add salt, red chilli powder, turmeric powder, coriander powder and Tata Sampann Chicken Masala and mix well. Add 2 tbsps water, mix and cook for 1 minute.6. Add tomatoes, mix and add ¼ cup water, mix well, cover and cook for 2-3 minutes. 7. Add chicken and sauté on high heat for 3-4 minutes. Add ¼ cup water and ghee and mix, cover and cook for 10-15 minutes or till the chicken is cooked completely. 8. Switch the heat off and transfer the chicken mixture into a serving bowl, garnish with coriander leaves.9.
