Method of Preparation:
Kadaknath Chicken, a variety of Chicken healthy and tasty with low-fat content.
I have ordered it Online for Country Chicken co, they deliver fresh and good quality Chicken.
We can see the pieces are also black in color, it's been already cleaned.
Now, will marinate it, transfer it to a mixing bowl, add a tsp of salt, 2 Tsp of Chili Powder, Coriander Powder 1 1/2 Tsp.
Add 1/2 a Tsp of Cumin Powder, Garam Masala 1/4 Tsp, Turmeric Powder 1/2 a Tsp and 1 Tsp of Ginger Garlic paste mix them all.
As this is a country Chicken it will take some time to cook so will cook it in a pressure cooker.
Add 2 Tbsp of Oil, 1/2 a Lemon squeeze, let it rest for 10 min to 1/2 an hour depending on our time frame.
Add some water and cook it until 4 whistles, will add the Masala later.
Take the whole Garam Masala, add some to a mixie jar, and some to the Pulav when we cook.
To a mixie jar add 2 Cardamoms, 2 Cloves, 7 to 8 Black PepperCorns, 2 Cinnamon Sticks, and 1 Tbsp of Poppy Seeds,
Add 4 to 5 Green Chilies, 1/2 a Cup of Mint and Coriander Leaves, add some water if required, and grind it into a fine paste.
Heat a pan with 2 Tbsp of Ghee, add 2 Bay Leaves, 1 Tsp of Caraway Seeds, 1 small piece of Star Anise, and the remaining Cardamom, Cloves, and Cinnamon.
Let the Whole Garam Masala saute until aromatic, add 2 onions cut into long pieces, saute until brown.
Add 2 Tomatoes and saute until soft, add a Tsp of Ginger Garlic Paste saute well and 1/2 a Tsp of Turmeric Powder.
Now, add the cooked Chicken to the temper, add the ground Green Masala and saute for a while in the Ghee.
Then, add 3/4 Kg of soaked Basmati Rice, soak it 1/2 an hour prior to cooking it. Drain off the water and add it.
For a cup of Rice add 1 1/2 Cup of Water, so add 4 1/2 cups of water, adjust the taste, place a lid and cook it on high flame.
When the water evaporates, lower the flame add some Coriander Leaves for garnishing, place the lid and cook it until the water completely evaporates.
Put off the flame and let it rest for 10 min and then open the lid and serve the yummilicious Black Chicken Pulao.
