Blueberry Orange Almond Loaf | Sanjeev Kapoor Khazana

Freshly baked cake loaf with combination of blueberries, orange zest and almonds.

BLUEBERRY ORANGE ALMOND LOAF

Ingredients

2 ½ cups refined flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ cup almond flour
2 eggs
1 cup castor sugar
4 tablespoons butter
¼ cup milk
¼ cup orange juice
2 teaspoons orange zest
1 cup fresh blueberries

Method

1. In a bowl add refined flour, baking powder, baking soda and almond flour together. Set aside.
2. In a separate bowl, break the eggs and beat them till creamy and fluffy.
3. Add butter to the eggs and beat till combined well.
4. Add in the flour mixture to the eggs in batches and fold with a spatula.
5. Add milk and fold to make a smooth batter.
6. Add orange juice and mix well. Add orange zest, mix well.
7. Transfer the batter to a greased loaf tin and bake for 20-25 minutes at 180˚C
