Vanilla cake pieces layered with blueberries, cream and vanilla custard

BLUEBERRY TRIFLE

Ingredients

½ cup blueberries
½ cup blueberry jam
1 eight-inch vanilla sponge cake
2½ cups + 4 tbsps cream
3 tbsps sugar
2 tbsps cranberry juice
2 cup vanilla custard

Method

1. Whisk 2 cups cream with sugar till sugar dissolves.
2. Slice sponge cake thinly and then cut into small cubes and put into a bowl. Add cranberry juice and mix. Add half the blueberries and mix.
3. Whisk blueberry jam till smooth and put into a small piping bag fitted with a thin nozzle.
4. Pipe out thin strips on the inside of 4 stemmed glasses.
5. Divide half the cake mixture equally among the glasses. Put 2 tbsps cream over the cake pieces in each glass. Put the remaining cake pieces over the cream.
6. Keep the glasses in the refrigerator for some time.
7. Whisk custard till smooth. Add 4 tbsps cream and whisk well.
8. Bring the glasses out of the refrigerator, pour the custard on top. Decorate with swirls of blueberry jam.
9. Give it a web like effect with a toothpick. Place a few of the remaining blueberries in the centre of each glass and serve immediately.
