Delicious pav bhaji along with egg adds a different flavour to this Bombay classic.BOMBAY STYLE ANDA PAV BHAJIIngredients8 eggs2 tablespoons oil2-3 green chillies chopped3 medium onions, finely chopped + for serving2 tomatoes, finely chopped½ cup tomato pureeSalt to taste2 teaspoons red chilli powder1 teaspoon turmeric powder1 large green capsicum, finely chopped1 teaspoon garam masala powder 3 tablespoons pav bhaji masala4 tablespoons butter + for serving2 tablespoons coriander chopped8 pavs for servingLemon wedge for servingMethod1. Heat oil in a non-stick pan. Add green chillies and onions sauté until the onions go translucent.2. Add tomatoes and cook till the tomatoes are pulpy. Add tomato puree and salt, cook until the oil separates. Add chilli powder, turmeric powder and ½ cup water, cook for 3-5 minutes.3. Add green capsicum and saute for2-3 minutes. Add garam masala and cook for 1 minute.4. Add pav bhaji masala and ½ cup water, mix well. Add 2 tablespoons butter, mix well.5. Grate eggs and coriander. Mix well and adjust seasoning, set aside.6. In the same pan add ½ tablespoon butter and ½ teaspoon pav bhaji masala and chopped coriander, slit the pavs without cutting through, coat the pavs in the masala from both the sides. Similarly repeat with the other pavs.7.
