Bombay Style Egg Pav Bhaji | Sanjeev Kapoor Khazana

Delicious pav bhaji along with egg adds a different flavour to this Bombay classic.

BOMBAY STYLE ANDA PAV BHAJI

Ingredients

8 eggs
2 tablespoons oil
2-3 green chillies chopped
3 medium onions, finely chopped + for serving
2 tomatoes, finely chopped
½ cup tomato puree
Salt to taste
2 teaspoons red chilli powder
1 teaspoon turmeric powder
1 large green capsicum, finely chopped
1 teaspoon garam masala powder
3 tablespoons pav bhaji masala
4 tablespoons butter + for serving
2 tablespoons coriander chopped
8 pavs for serving
Lemon wedge for serving

Method

1. Heat oil in a non-stick pan. Add green chillies and onions sauté until the onions go translucent.
2. Add tomatoes and cook till the tomatoes are pulpy. Add tomato puree and salt, cook until the oil separates. Add chilli powder, turmeric powder and ½ cup water, cook for 3-5 minutes.
3. Add green capsicum and saute for2-3 minutes. Add garam masala and cook for 1 minute.
4. Add pav bhaji masala and ½ cup water, mix well. Add 2 tablespoons butter, mix well.
5. Grate eggs and coriander. Mix well and adjust seasoning, set aside.
6. In the same pan add ½ tablespoon butter and ½ teaspoon pav bhaji masala and chopped coriander, slit the pavs without cutting through, coat the pavs in the masala from both the sides. Similarly repeat with the other pavs.
7. Serve hot with anda pav bhaji, butter, chopped onions and lemon wedge.
