Bombil Fry | Sanjeev Kapoor Khazana

BOMBIL FRY

Ingredients

3 Bombil Fish
1 teaspoon turmeric powder
1 teaspoon red chilli powder + 1 teaspoon
1 ½ tablespoon garlic paste
2 tablespoons lemon juice
Salt to taste
½ cup semolina
1 cup cornflour slurry
Oil for deep-frying
Chopped coriander leaves for garnish
Green chutney for serving

Method

1. Clean the fish properly and slit open from one end.
2. Pat dry the fishes with absorbent paper.
3. Transfer the fish into a bowl and marinate with turmeric powder, chilli powder, garlic paste and lemon juice. Mix well together, add salt and mix again. Set aside.
4. Add semolina to a plate along with 1 teaspoon red chilli powder and salt, mix well.
5. Dip the marinated fish in the prepared cornflour slurry and coat with the prepared semolina mixture completely and set aside till the oil heats.
6. Heat sufficient oil in kadai to deep-fry.
7. Deep-fry the fish till golden. Drain on an absorbent paper.
8. Garnish with chopped coriander leaves and serve warm with green chutney.
