Marinated lamb chops grilled to perfection topped with sauce.BRAZILIAN GRILLED LAMB CHOPSIngredients1 lamb rack, excess fat trimmedZest of 1 Italian lemon¼ cup extra virgin olive oil + for brushing½ cup white wine1 tablespoon chopped fresh mint leavesCrushed black peppercorns to taste Salt to tasteJuice of ½ Italian lemon2 tablespoons refined flour (maida)½ cup lamb stockFresh parsley sprig for garnishing Method1. Cut the lamb rack into chops.2. Mix together lemon zest, olive oil, white wine, mint leaves, crushed peppercorns and salt in a bowl. Add lamb chops and lemon juice, mix and set aside to marinate for 15-20 minutes.3. Heat a non-stick grill pan and brush with some olive oil. Place the marinated chops in it and grill till fully cooked and evenly done. Remove from pan and set aside. 4. Pour the leftover marinade in the pan, add flour, mix and sauté for a minute. Add lamb stock, mix and simmer till the sauce thickens. 5. Strain the sauce and pour over lamb chops. Garnish with parsley and serve hot.
