These crunchy potato filled Pakodas are everything you need to relax during these intense rains. BREAD PAKODAIngredients2 bread slices2 medium potatoes, boiled, peeled and mashed2 tsps oil + for deep frying1 tsp mustard seeds7-8 curry leaves1 tsp green chilli paste¾ tsp turmeric powder1 tbsp chopped fresh coriander leavesSalt to taste1½ cups gram flour (besan)1 tsp red chilli powderDate and tamarind chutney to serveGreen chutney to serveMethod1. Heat 2 tsps oil in a pan, add mustard seeds and let them splutter. Add curry leaves, green chilli paste and sauté well.2. Add potatoes, ¼ tsp turmeric powder and mix till well combined. Add chopped coriander and mix well.3. Add salt, mix and take it off the heat. Transfer into a bowl and allow to cool to room temperature.4. For the batter, take gram flour in a large bowl. Add remaining turmeric powder, red chilli powder and salt. Add sufficient water and whisk well to make a thick batter of coating consistency.5. Evenly spread a portion of the prepared mixture on top of a bread slice, cover with another bread slice and diagonally cut in half and set aside. 6. Heat sufficient oil in a kadai, coat each diagonal bread piece with the batter and drop it into the hot oil. Deep fry till golden and crisp. Drain on an absorbent paper. 7. Cut the bread pakodas in half and transfer on a serving plate.
