Most commonly served in South India, bread upma is a quick, easy breakfast recipe that is filled with masala and looks extremely vibrant!BREAD UPMAIngredients12 pavs, torn into ½ inch pieces2-3 tablespoons oil 1 teaspoon mustard seeds1 teaspoon cumin seeds¼ teaspoon asafoetida (hing)5-6 curry leaves2 green chillies, chopped2 medium onions, finely choppedSalt to taste ¼ teaspoon turmeric powder½ teaspoon sugar4-5 fresh coriander sprigs, chopped + for garnishingMethod1. Heat oil in a non-stick pan. Add mustard seeds and let it splutter. Add cumin seeds and when it changes colour, add asafoetida and curry leaves and let curry leaves crackle. 2. Add green chillies and sauté for 30 seconds. Add onions and salt and sauté on high heat for 2-3 minutes or till golden brown.3. Add turmeric powder and sugar and mix. Add ¼ cup water and mix. Add pav pieces and mix well. 4. Sprinkle some water, cover and cook on low heat for 4-5 minutes. Add chopped coriander sprigs and mix well.5. Serve hot garnished with coriander sprig.
