Breakfast buns are a tasty breakfast or brunch dish. An easy, yet impressive, pan fried egg dish, these breakfast buns are sure to steal the show!

BREAKFAST BUNS

Ingredients

4 buns
4 small onions
8 eggs
Salt to taste
2 tsps crushed red chillies
2 tsps black pepper powder
Few sprigs of fresh thyme
12 tbsps oil
2 medium tomatoes
4 cheese slices

Method

1. For each portion, roughly chop 1 onion and put into a chopper. Add 2 eggs, salt, ½ tsp crushed red chillies, ½ tsp black pepper powder, a little fresh thyme and process.
2. Heat 2 tbsps oil in a non-stick pan and place a round ring in it. Pour the egg mixture into the ring and let it cook.
3. Halve 1 bun. Heat 1 tbsp oil in another non-stick pan and place the bun, cut side facing down, in the pan and cook till golden.
4. Cut tomatoes into round slices.
5. Place the base half of the bun in a serving plate, place some tomato slices on it.
6. Gently remove the ring from the first pan and flip the omelette. Cook the other side similarly.
7. Once the omelette is done, place it over the tomato slices. Place a cheese slice over it and cover with the upper half of the bun. Serve immediately.
