An easy, semi-healthy broccoli and cauliflower gratin recipe. A gratin is typically a bready-cheesy-toasty topping, and it's a great way to jazz up broccoli and cauliflower. Just broccoli and cheese is nice, but adding cauliflower kinda smooths out the taste. This is a cheesy dish without being overly cheesy, and not overcooking the vegetables will add awesome texture. I like the Monterey Jack/Romano cheese combo, but any kind of cheese or cheeses will do, so use your favorite. In a small bowl, combine the cheese and yogurt, and add salt and pepper to taste. Mix well. Trim fresh broccoli and cauliflower into similar sized florets so they will cook evenly. In a small skillet, melt butter and saute garlic for about 1 minute.Stir bread crumbs into the garlic/butter (I like panko bread crumbs for gratins!).The bread crumbs will soak up the butter. Mix well and set aside. Steam veggies on the stove top in a steaming basket, or just add inch of water to the bottom of a pan and steam. 4-6 minutes of steaming is generally what I like; veggies with a bit or crunch are more vibrant, soggy veggies are sad.Drain broccoli and cauliflower well and place steamed veggies into a baking dish. Add salt and pepper. Top the veggies with the cheese/yogurt topping, then top the dish with the garlic/butter bread crumbs.Bake in an oven preheated to 450 degrees.Bake until the breadcrumb topping is toasted. This will only take a few minutes, so watch the dish closely.That's it.
