Bread toast slices topped with sweet mashed potato mixture and broccoli.

BROCCOLI TOAST

Ingredients

1 small broccoli, separated and cut into small florets
4 brown bread slices
3-4 sweet potatoes, peeled and cut into cubes
Olive oil for drizzling
Salt to taste
2 tsps butter
7 tsps fresh cream
¼ tsp red chilli powder
1 cup orange juice
Crushed black peppercorns to taste

Method

1. Discard edges of bread slices and cut into halves.
2. Heat a non-stick pan. Place bread halves and toast till golden and crisp.
3. Heat sufficient water in another non-stick pan. Add sweet potatoes and boil.
4. Drizzle ½ tsp olive oil on each bread half, flip and toast till the other side also turns golden and crisp.
5. Mash sweet potatoes. Remove pan from heat and add salt, butter, cream and red chilli powder. Mix well.
6. Heat orange juice in another non-stick pan. Add salt and crushed peppercorns, mix well and let it reduce.
7. Add broccoli, mix well and cook till the broccoli turns soft.
8. Spread mashed sweet potato mixture onto each toasted bread half.
9. Transfer broccoli mixture into a bowl and cool to room temperature. Top the bread halves with cooked broccoli.
10. Serve immediately.
