Marinated and cooked chicken, pan-seared in a classic combo of butter and garlic, to amp up the flavours, is definitely something that always gets us drooling!

BUTTER GARLIC CHICKEN

Ingredients

2 tbsps butter
2 tbsps finely chopped garlic
400 grams chicken leg boneless, cut into 1 inch pieces
Salt to taste
Crushed black peppercorns to taste
2½ tbsps refined flour (maida)
2 tbsps olive oil
½ cup chicken stock
1-2 sprigs of fresh thyme
1-2 sprigs of fresh oregano
1 tbsp chopped fresh parsley leaves + for garnish
Red chilli flakes for garnish
Toasted bread slices to serve


Method

1. Take chicken in a bowl, add salt, crushed black peppercorns, and 1½ tbsps refined flour and mix till well combined.
2. Heat olive oil in a non-stick shallow pan. Arrange the chicken pieces on it and cook on high heat for 4-5 minutes, stirring in between. Transfer into a bowl.
3. Heat butter in the same non-stick pan. Add garlic and sauté for 1-2 minutes.
4. Add the remaining refined flour and sauté for 1-2 minutes.
5. Add the chicken and mix well. Stir in the chicken stock.
6. Add salt, crushed black peppercorns, pluck the leaves of thyme and oregano and add into the pan and mix well. Cook for 3-4 minutes.
7. Add the parsley leaves and mix well.
8. Transfer the butter garlic chicken into a serving plate. Garnish with parsley leaves and serve hot with toasted bread slices.
