Marinated and cooked chicken, pan-seared in a classic combo of butter and garlic, to amp up the flavours, is definitely something that always gets us drooling!BUTTER GARLIC CHICKENIngredients2 tbsps butter2 tbsps finely chopped garlic400 grams chicken leg boneless, cut into 1 inch piecesSalt to tasteCrushed black peppercorns to taste2½ tbsps refined flour (maida)2 tbsps olive oil½ cup chicken stock1-2 sprigs of fresh thyme1-2 sprigs of fresh oregano1 tbsp chopped fresh parsley leaves + for garnishRed chilli flakes for garnishToasted bread slices to serveMethod1. Take chicken in a bowl, add salt, crushed black peppercorns, and 1½ tbsps refined flour and mix till well combined. 2. Heat olive oil in a non-stick shallow pan. Arrange the chicken pieces on it and cook on high heat for 4-5 minutes, stirring in between. Transfer into a bowl.3. Heat butter in the same non-stick pan. Add garlic and sauté for 1-2 minutes.4. Add the remaining refined flour and sauté for 1-2 minutes. 5. Add the chicken and mix well. Stir in the chicken stock. 6. Add salt, crushed black peppercorns, pluck the leaves of thyme and oregano and add into the pan and mix well. Cook for 3-4 minutes.7. Add the parsley leaves and mix well. 8. Transfer the butter garlic chicken into a serving plate. Garnish with parsley leaves and serve hot with toasted bread slices.
