An unusual curry – chicken cooked with roasted pumpkin puree and masalasCARAMELIZED PUMPKIN CHICKEN CURRYIngredients200 gms red pumpkin (kaddu), peeled and sliced thinly4 boneless chicken breasts4 tbsps oilSalt to taste1½ tbsps ginger-garlic paste1 tsp roasted cumin powder½ cup tomato puree½ green chilli½ tsp garam masala powderA fresh mint sprigMethod 1. Heat 2 tbsps oil in a non-stick pan, add pumpkin slices and little salt and cook on high heat.2. Heat 2 tbsps oil in another non-stick pan. Cut chicken into medium sized pieces and put in this pan. Add ginger-garlic paste and mix. Cover and cook for 2 minutes.3. Add cumin powder and mix. Cover and cook.4. When the pumpkin gets slightly burnt, put it into a mixer jar. Add tomato puree and grind. Add green chilli and grind again.5. Add ½ cup water to the chicken and mix. Add the pumpkin paste and mix. Rinse the mixer jar with ¼ cup water and add. Add salt and garam masala powder and mix. Cover and cook till chicken is done.6. Transfer into a serving bowl and serve garnished with fresh mint sprig.
