It is a great hit with everybody, all thanks to the cheesy mouth-feel and peppy flavour. You need just common ingredients like flour, bread crumbs, cheese and flavour-givers like coriander and green chillies. A bit of tact is needed in shaping the balls – but once you get that right, your Cheese Balls will be a sureshot success. After dividing the mixture into equal portions, smoothen each portion and then shape it into a ball to avoid cracks from forming. Also, make sure you do the steps one after the other without a long gap, because when the mixture is kept out for a long time, it dries up.Preparation Time: 10 minutes.Cooking Time: 15 minutes.Makes 35 balls. 1½ cups grated processed cheese¾ cup fresh bread crumbs2 ½ tbsp cornflour1 tbsp plain flour (maida)2 tsp finely chopped green chillies1 tbsp finely chopped coriander (dhania)Salt and freshly ground black pepper (kalimirch) to tasteOil for Deep-fryingFor servingChilli sauce1. Combine all the ingredients in a deep bowl along with approx. 2 tbsp of water and mix very well.2. Divide the mixture into 35 equal portions and shape each portion into a ball.3. Heat the oil and deep-fry a few balls at time on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Serve immediately with chilli sauce.
