Rusks topped with melted cheese slices and crunchy mushroom and walnut mixture.CHEESE CROSTINI Ingredients 1 block brie cheese4-8 rusks Crushed black peppercorns to taste 1 tablespoon olive oil 2 teaspoons finely chopped green garlic1 medium onion, finely chopped8-10 button mushrooms, finely chopped2 tablespoons chopped walnuts Salt to taste A pinch fresh thyme 1 tablespoon balsamic vinegarChopped fresh parsley for garnishing Method 1. Preheat oven to 180º C. 2. Slice cheese thickly. 3. Place rusks on a baking tray. Top with cheese slices and sprinkle crushed peppercorns. 4. Put the tray in the preheated oven and bake till the cheese melts. 5. Heat olive oil in a non-stick pan. Add green garlic and onions and sauté till onions turn translucent. 6. Add mushrooms, walnuts, salt and thyme, mix and cook for a minute. Add balsamic vinegar, mix well and cook for 4-5 minutes. 7. Top the rusks with a spoonful of cooked mixture over the cheese, garnish with parsley and serve immediately.
