CHEESE FLAN

Ingredients

200 gms cream cheese, softened
1 cup sugar
2½ cups milk
1 inch cinnamon stick
½ cup condensed milk
5 eggs
1 tsp vanilla essence
⅛ tsp salt

Method

1. Preheat oven to 180° C.
2. To make caramel, heat sugar and ¼ cup water in a non-stick pan, on medium heat, stirring continuously till sugar dissolves.
3. Dip a silicon brush in cold water and rub on the sides of the pan occasionally so that the sugar browns evenly. Put caramelized sugar equally into 4 ramekin moulds.
4. To make flan, boil milk in a deep non-stick pan, add cinnamon and cook till milk thickens. Switch off heat, discard cinnamon and cool to room temperature.
5. Combine condensed milk and cream cheese in a bowl and mix well. Break 2 eggs and add along with vanilla essence and salt and beat with an electric beater. Break remaining eggs and add and continue to beat till smooth. Add milk mixture and beat again.
6. Once the caramelized sugar in the ramekin moulds is set, put the milk-cream cheese mixture in them equally. Place the moulds in a baking tray, fill it with sufficient water, cover with an aluminum foil, place it in preheated oven and bake for 50-55 minutes.
7. Remove the moulds from the water bath and rest for 15 minutes. Cool to room temperature, invert the flans on a serving platter and serve warm.
