Pizza dough squares stuffed with cheese mixture shaped into pockets and baked till perfection.CHEESE POCKETSIngredients1 cup grated cheddar cheese1 cup grated processed cheese1 cup cheese spread250 grams readymade pizza dough Butter for greasing ½ teaspoon dried mixed herbs Salt to taste Crushed black peppercorns to taste 2 teaspoons chopped fresh parsley½ small red capsicum, chopped ½ small yellow capsicum, chopped Refined flour (maida) for dustingMilk for brushing Method1. Preheat oven to 180˚C. Grease a baking tray with some butter. 2. Mix together cheddar cheese, processed cheese, cheese spread, mixed herbs, salt, crushed peppercorns, parsley, red capsicum and yellow capsicum in a bowl. 3. Dust the worktop with some flour. Place the dough on it and roll out into a large thin disc. 4. Cut into squares, place a spoonful of cheese mixture in the centre, apply water on the edges and bring the edges over. Seal with a fork. 5. Transfer the pockets on the greased tray and brush with some milk. Put the tray in the preheated oven and bake for 10-15 minutes. 6. Serve hot with tomato ketchup.
