Cheese Pocket | Sanjeev Kapoor Khazana

Pizza dough squares stuffed with cheese mixture shaped into pockets and baked till perfection.

CHEESE POCKETS

Ingredients

1 cup grated cheddar cheese
1 cup grated processed cheese
1 cup cheese spread
250 grams readymade pizza dough
Butter for greasing
½ teaspoon dried mixed herbs
Salt to taste
Crushed black peppercorns to taste
2 teaspoons chopped fresh parsley
½ small red capsicum, chopped
½ small yellow capsicum, chopped
Refined flour (maida) for dusting
Milk for brushing

Method

1. Preheat oven to 180˚C. Grease a baking tray with some butter.
2. Mix together cheddar cheese, processed cheese, cheese spread, mixed herbs, salt, crushed peppercorns, parsley, red capsicum and yellow capsicum in a bowl.
3. Dust the worktop with some flour. Place the dough on it and roll out into a large thin disc.
4. Cut into squares, place a spoonful of cheese mixture in the centre, apply water on the edges and bring the edges over. Seal with a fork.
5. Transfer the pockets on the greased tray and brush with some milk. Put the tray in the preheated oven and bake for 10-15 minutes.
6. Serve hot with tomato ketchup.
