Cheesy Chicken Sandwiches | Sanjeev Kapoor Khazana

Crispy toast sandwiches made with a chicken and cheese filling.

CHEESY CHICKEN SANDWICH

Ingredients

1 cup boiled and shredded chicken
1 cup mozzarella cheese, grated
8 brown bread slices
4 tbsps butter + for brushing
1 green chilli, chopped
½ medium onion, chopped
1 tbsp refined flour
1 cup milk
Salt to taste
½ tsp crushed black pepper

Method

1. Heat butter in a nonstick pan. Add chilies and onions and sauté for 2 minutes. Add refined flour and sauté. Add milk and mix well to avoid lumps.
2. Add half the cheese, shredded chicken, salt, black pepper and mix well.
3. Preheat a sandwich griller.
4. Apply butter on bread slices and top it with a portion of the chicken mixture. Sprinkle remaining mozzarella cheese on each slice and cover with another buttered bread slice.
5. Grill the sandwiches for 5 minutes or till grill marks appear on both sides.
6. Cut in half and serve hot with tomato ketchup.
