CHEESY CRISPY PITA

Ingredients

4 pita breads
Grated processed cheese as required
1 medium tomato, deseeded and finely chopped
½ medium green capsicum, finely chopped
Salt to taste
1 green chilli, finely chopped
1 teaspoon chopped fresh parsley
Butter as required
Dip
1½ tablespoons mayonnaise
2 tablespoons hung yogurt
½ teaspoon red chilli flakes
½ teaspoon chopped fresh parsley
Fresh parsley sprig for garnishing

Method

1. Mix together tomato, capsicum, salt, green chilli and parsley in a bowl.
2. To prepare one sandwich, heat a non-stick tawa and grease it with some butter. Place one pita bread and roast on low heat from one side till golden brown and crisp.
3. Spread the vegetable mixture and some cheese on top, cover with another pita bread, flip the sandwich and roast till golden brown and crisp, applying some butter. Transfer on the worktop and cut into wedges.
4. To prepare the dip, mix together mayonnaise and hung yogurt in a bowl. Add chilli flakes and parsley and mix well.
5. Place the sandwich on a serving platter. Put the dip in a serving bowl and garnish with a parsley sprig and serve hot.
