CHEESY CRISPY PITA Ingredients 4 pita breads Grated processed cheese as required1 medium tomato, deseeded and finely chopped½ medium green capsicum, finely choppedSalt to taste 1 green chilli, finely chopped1 teaspoon chopped fresh parsleyButter as requiredDip1½ tablespoons mayonnaise2 tablespoons hung yogurt½ teaspoon red chilli flakes½ teaspoon chopped fresh parsley Fresh parsley sprig for garnishingMethod1. Mix together tomato, capsicum, salt, green chilli and parsley in a bowl.2. To prepare one sandwich, heat a non-stick tawa and grease it with some butter. Place one pita bread and roast on low heat from one side till golden brown and crisp. 3. Spread the vegetable mixture and some cheese on top, cover with another pita bread, flip the sandwich and roast till golden brown and crisp, applying some butter. Transfer on the worktop and cut into wedges. 4. To prepare the dip, mix together mayonnaise and hung yogurt in a bowl. Add chilli flakes and parsley and mix well. 5. Place the sandwich on a serving platter.
