The crispy onion and cheese go together beautifully.CHEESY ONION RINGSIngredients 4 large onions, thickly sliced and layers separated 200 grams mozzarella cheese, cut into 2 inch thick strips 1½ cups refined flour (maida)1 teaspoon yellow mustard powder1 teaspoon paprika 1 teaspoon onion powder1 teaspoon garlic powderSalt to taste 1 teaspoon dried mixed herbs Crushed black peppercorns to taste Oil for deep-frying½ cup panko breadcrumbs ½ cup crushed cornflakesTomato ketchup for servingMethod1. Mix together 1 cup flour, mustard powder, paprika, onion powder, garlic powder, salt, dried mixed herbs and crushed peppercorns in a bowl. Add some water and mix well to make a thick batter. 2. Spread remaining flour on a plate and coat the onion rings evenly. 3. Place mozzarella cheese sticks in the inner side of one onion ring and place another onion ring covering the cheese stick. 4. Coat the stuffed onion rings with the flour. 5. Mix together panko breadcrumbs, cornflakes, salt and crushed peppercorns on a plate. 6. Dip the prepared onion rings in the batter, coat with breadcrumbs-cornflakes mixture and transfer on another plate. Refrigerate for 30 minutes. 7. Heat sufficient oil in a kadai. Put the onion rings and deep-fry till golden brown and crisp. Drain on absorbent paper.8. Serve hot with tomato ketchup.
